Simple Deviled Eggs

Happy second day of Easter

I really like Easter as it’s the fuss free holiday of the year. There are no presents involved, no complicated dinner parties or prepping, you can easily get away with a lavish brunch table filled with just bread and cheese. I love the mini chocolate eggs as they hold everything I love about chocolate in a small shaped egg. I’m really worried about what we are going to eat when we get through our chocolate Easter egg stash. For some reason the sun is always out on Easter and the fruit trees blossom, there are baby animals out and about and it’s just all so hopeful.

Ingredients

  • 6 hard-boiled eggs

  • 2 tbsp mayonnaise

  • 1/2 tsp garam masala

  • 1/2 tsp smoked paprika powder (plus extra for dusting)

  • a few sprigs of chives for garnish

Instructions

  1. Boil your eggs like you are used to.

  2. Blush them off using cold water, peal, cut in halves setting the yolks in a bowl and spreading out the egg white halves on a plate. A little trick; use a bit of kitchen towel to wipe the knife clean when cutting. This way there will be no egg yolk all over your egg whites.

  3. Mash the yolks with a fork and add the mayonnaise, garam masala and smoked paprika. Stir everything together until it's smooth. I use a blender to get it extra smooth as I use a piping bag to add to mixture to the egg whites.

  4. Sprinkle on smoked paprika for garnish.

You can do it now quickly for lunch or as a lovely snack in the afternoon.
