Gnocchi with Peas and Spinach

Ingredients

  • 400g frozen peas
  • 250g sour cream
  • 1 clove garlic (crushed)
  • ¼ tsp salt
  • 200g washed spinach
  • juice of half a lemon
  • zest of half a lemon
  • 400g Gnocchi
  • Parmesan cheese

Instructions

Pour the frozen peas, sour cream, garlic and salt in a saucepan and stir until all the cream is resolved.

Lower heat and put a lid on the pan.

Meanwhile cook the gnocchi exactly as described on the packaging, gnocchi can vary greatly by brand.

Get the lid of the pan with peas (after about 10 minutes of cooking) and slowly stir the spinach through the rest of the ingredients until the spinach has wilted.

Add the lemon juice and remove from heat.

Divide the gnocchi and spinach and peas on the plates, sprinkle with lemon zest and grated Parmesan.
